Martha's 12 Days of Christmas Fitness Adventure has definitely been an adventure! I have been sore for 5 days straight now and coming back for more pain!!!! But seriously, I love how Martha has been able to come up such creative ideas that incorporate fitness, fun and friendly competition amongst our peers. I would totally recommend coming and trying this out!
PART 2
Oatmeal Cranberry White Chocolate Chunk Cookies
2/3 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 1/4 cups dried cranberries
2/3 cup coarsely chopped white chocolate
Preheat oven to 375 degrees F.
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time. Combine oats, flour, salt, and baking soda; stir into butter mixture one cup at a time, mixing well after each addition. Stir in dried cranberries and white chocolate. Drop by rounded teaspoons onto ungreased cookie sheets.
Bake for 10 to 12 minutes in preheated oven, or until golden brown. Cool on wire racks.

Martha's 12 Days of Christmas is really fun. I have been in pain all week, but it is a good thing. I have been having a lot of fun with this christmas challenge.
Part 2
Cruschickies
INGREDIENTS
• 3 eggs
• 3 tablespoons white sugar
• 1/2 cup sour cream
• 1 teaspoon vanilla extract
• 2 tablespoons rum
• 1/4 teaspoon salt
• 3 1/3 cups all-purpose flour
• 4 cups vegetable oil for frying
• 1/2 cup confectioners' sugar
DIRECTIONS
1. Beat together the eggs and sugar. Blend in sour cream, vanilla and rum or brandy. Fold in sifted flour and salt. Knead dough on floured surface until the dough is smooth.
2. Cut off a small portion of dough and roll out as thin as possible (almost paper thin). The dough will spring back as you roll it if you treat it like a pie crust.
3. Cut into 2-inch wide strips. Cut the strips diagonally every 4 inches. In the middle of each cookie cut a one inch slit. Pull one of the pointier corners through the slit. If you are making these alone, it is suggested that you do all of the rolling and cutting all the dough before frying, or in two batches. If two people are making the cookies, the roller/cutter should get a "stockpile" before frying begins.
4. Heat oil to 350 degrees F (175 degrees C). An electric skillet works well, especially if you are working alone. Slide about seven or eight cookies into the oil. They should pop up to the top of the oil after a second.
5. Very soon, the cookies should be a light brown (or very dark tan) on the bottom. Flip the cookies; a two-tined carving fork works well. When the second side is browned, remove from the oil with a slotted spoon and drain on paper towels. When the paper towel is filled with cookies, shake confectioner's sugar over the cookies and move the cookies, paper towels and all, to a cookie sheet.

Wow - I thought I was fit until this week. I change my workout every 4 weeks, but never moves like this! It's AWESOME - but ouch!
Part 2:
Gingerbread cookies
1 1/2 C all-purpose flour
1/4 tsp baking soda
1 1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp freshly grated nutmeg
1/8 tsp ground cloves
1/4 C unsalted butter, softened
1/4 C packed dark brown sugar
1/4 C molasses
1 egg white
1/4 C confectioners sugar
Heat oven to 350F
Sift together first 6 ingredients onto waxed paper. In a large bowl, beat together next 4 ingredients. Gradually beat in flour mixture until blended.
Divide dough in half; wrap one half in plastic and chill.
On a lightly floured surface, roll out remaining dough 1.8" thick. cut with cookie cutters and arrange 1/2" apart on cookie sheet lined with parchment paper. Repeat with reserved dough.
Bake 8 minutes, or until edges are lightly browned. Transfer cookies to wire rack to cool completely.
IF DESIRED:
In a bowl, combine confectioners sugar and 2 1/2 tsp water until smooth. Transfer to a heavy duty plastic bag; snip off tiny corner and decorate cookies.
Makes about 3 dozen 2" cookies
