Cranberry Sauce:

1 cup water
2 cups cranberries (8 ounces)

1. In a medium saucepan combine sugar and water. Bring to boiling, stirring to dissolve sugar. Boil rapidly for 5 minutes. Add cranberries. Return to boiling; reduce heat. Boil gently, uncovered, over medium-high heat for 3 to 4 mintues or until skins pop, stirring occasionally.
2. Remove from heat. Serve warm or chilled with poultry or pork. Makes about 2 cups sauce (thirty-two 1-tablespoon servings).
Make-Ahead Tip: Prepare sauce; cover and chill up to 1 week.

Lightened Pumpkin Pie:

Ingredients
1 recipe Lightened Pastry for Single-Crust Pie
1 15-ounce can pumpkin
2/3 cup sugar
1/2 teaspoon ground ginger
1-1/2 teaspoons ground cinnamon
1/8 teaspoon ground cloves or allspice
4 egg whites
1 cup evaporated skim milk
1/4 cup water
8 tablespoons frozen whipped dessert topping, thawed (optional)

Directions
Prepare Pastry for Lightened Single-Crust Pie and line a 9-inch pie plate as directed.
Stir together pumpkin, sugar, cinnamon, ginger, and cloves or allspice in a large mixing bowl. Add egg whites. Beat mixture with a fork until combined. Stir in evaporated skim milk and water. Place pastry-lined pie plate on an oven rack. Pour pumpkin mixture into pie plate. Cover edge of pie crust with foil.
Bake in a 375 degree F oven for 25 minutes. Remove foil. Bake for 25 to 30 minutes more or until a knife inserted near the center comes out clean. Cool pie on a wire rack. Cover and store in refrigerator. Serve with whipped topping, if desired. Makes 8 servings.
Make-Ahead Tip: Up to 1 week ahead, prepare pastry. Roll the pastry into rounds. Place on waxed paper on a baking sheet. Wrap, seal, label, and freeze. Thaw at room temperature before using. Pastry also may be refrigerated for up to 3 days.
Lightened Pastry for Single-Crust PieButter-flavored shortening also works well in this recipe.1-1/4 cups all-purpose flour1/4 teaspoon salt1/4 cup shortening4 to 5 tablespoons cold waterStir together flour and the salt. Using a pastry blender cut in shortening until pieces are pea size.Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough, using 1 tablespoon of the water at a time, until all the dough is moistened. Form dough into a ball.On a lightly floured surface, use your hands to slightly flatten dough. Roll dough from center to edges into a circle about 12 inches in diameter. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry.Trim pastry to 1/2 inch beyond edge of pie plate. Fold under extra pastry. Crimp edge as desired. Do not prick pastry. Prepare for the cold season

Hi Everyone! Prepare for the cold season

I hope everyone is staying nice and warm! I just can’t believe this weather! This pass week was a tough week for me. I got hit with the flu on wed and talk about a nasty and today is Sunday I am just slowing feeling somewhat better. The last time I have been this sick was back in my late teens.

Prepare Yourself for Cold SeasonWith the colder weather, bothersome cold viruses run rampant. Studies show that the average person contracts about three colds per year; and those who are in contact with young children tend to get even more.Often a cold begins with a sore throat. A runny or congested nose follows and, within a few days, a cough begins. A cold can last two or three weeks; however, most people are better within seven to 10 days. Because colds are caused by viruses, there is no cure for the common cold. Antibiotics do not kill these viruses and can lead to resistant strains of bacteria. Prevention is the best approach to combat the cold virus; however once it’s taken hold, the best you can do is try to minimize your symptoms. Here are a few tips to prepare you and your family for the onslaught of the cold season, which tends to run from September until March or April. Wash Your HandsFrequent handwashing is one of the simplest and most effective ways to keep from catching a cold. Anti-bacterial washes allow you to get the benefits of handwashing when you don’t have access to soap and water. Alcohol-based foams and gels are recommended by the Centers for Disease Control for hand hygiene. Fall Medicine Cabinet CleaningJust in case you do catch a cold, make sure your medicine cabinet or first aid kit is fully stocked with current over-the-counter medications. You should examine the contents of your medicine cabinet and discard any expired medicines at least once per year. Then you’ll want to restock with a supply of cough suppressants, pain relievers and antihistamines that may provide the perfect combination to combat the symptoms of any colds you might catch this season. Keep in mind that the most convenient medicines are portable so that you can manage your symptoms even when you’re not at home. Portable medicines, such as gelcap-formulated cough suppressants mean you can get effective cough relief whenever and wherever you need it. For example, maximum strength DexAlone is a nonprescription gelcap-formulated cough suppressant that is stronger and longer lasting than some popular cough syrups. It’s available in local pharmacies and online at www.dexalone.com. Eat Your Fruits and VeggiesMaintaining a well-balanced diet is also a cold prevention tip. Plenty of nutritious food is essential to building a healthy immune system. A well-balanced diet provides sources of energy and nutrition for optimal growth and development. Taking a daily multi-vitamin also helps ensure that you will receive an adequate dose of minerals and vitamins. Sleeping BeautyOn average, a person needs seven to eight hours of sleep every night. Lack of sleep can lower the immune system’s ability to react when needed. Without sufficient sleep, the immune system is hard-pressed to keep up with its nightly repair work. This creates the opportunity for disease processes to begin. These are just a few suggestions to help you and your family enjoy the fall season without a runny nose, achy head and persistent cough. Tribute to 9/11 Poem!

Tribute 9/11 Poem!

Our Sad September Snow

Morning broke once more, with pure and simple trust We believed the door was closed, and the lock free of rust But sadly, we were wrong. We were out there in the gale Our ship did toss in a sea of tears, with torn and tattered sail The planes, they came in low, streaking fast across the sky They whistled past the structures, caught in the public's eye First one, and then the next, but a few minutes apart and in those tragic moments, they broke our country's heart The explosion seemed like fiction. The fire and the smoke We all drew in the toxins, and gave a sickly choke The buildings soon fell down. That scene we all remember when ashes hit the air, and it snowed in our September Steel dropped like meteors. Glass like hot rain We heard our brother's screams, and felt our sister's pain Dear God, why did it happen? Dear God, what made it so? Dear God, what brought our September this cruel and vicious snow? Lord help us in our task. Lord help us in our prayer Lord guide us to our friends who need our gentle care Lord take us by the hand, and tell us where to go Lord lead us through the blizzard of our sad September snow Our family members are gone. With grief we hang our head We place our hand to our heart, and mourn our country's deadBut we owe them our pledge. They must see that we still thrive We must show them and this world that justice is alive This country is not lost. Our flag is still up high Those things we love so dearly in truth can never die Let wisdom be our compass, and someday we will know how and why we suffered this gray and dismal snow Time will not diminish it. The memory long will last The image will still be there in years yet to be passed And children in the future will read about this day when it snowed in our September, and the world lost its way
9/11/01: We will never forget

Good to be back!

HI Everyone!

It’s good to be back!! Well I don’t know where to begin but to say the least it was a very disappointing weekend for me. Coming into this show – was the best shape and condition ever – I was hoping a higher placing. Unfortunate I haven’t paid my dues yet. That it self found it very frustrating. However the girls were wonderful – back stage!! It was a pleasure meeting Lisa Taylor (her first pro debut) – what a great gal.

The show ran nice and smoothly, Joe was so wonderful and helpful! Jan Tana and her team were great – it was a pleasure seeing her and shared some good laughs!!

Personally I couldn’t have ask a better day – waking up at 4am and leading up to the show, everything ran so nice and smoothly for me. My hair and make up turn out perfect – I was truly bless and thankful for enjoyable and relaxing day for me!! Sharon was so awesome – thank you for being there and your support!! Gary from (muscle mag magazine) took few pictures backstage –before the pre-judging). It was nice to see him.

I would like to thank all the emails that I have received – thank you for your kind words and support.

I would like to thank Darren (Christina husband) taking pictures of the show! Plus it was wonderful to see Christina again, she was competing this weekend as well – I just wanted to say you looked “beautiful, and what amazing transformation you have made”.

After the show – because I was so tried – but starving, Sharon and I order in Boston pizza . My eyes were bigger than my stomach – I order (pizza bread, pasta and medium size meat lover pizza). Well I didn’t get very far – I found myself just picking at everything.

Monday (we were planning to go out and venture out to Montreal downtown – however with the long Labour Day weekend – everything was close ). That really sucked!!! So all we did was stay in our room and watch TV all day…

Here are some pictures from the show – the pictures speak for itself !!!! Congrats to Michelle, Inge and Nina!

Have a great week everyone!
